Chef Goes South of the Border

In September, Chef Burke traveled to the Mexican city of Oaxaca to learn about the Mezcal from Oaxaca Project. The aim of the project is to preserve, educate and share the love for the land and traditions passed down from generation to generation, including the production of mezcal. David and fellow chefs Andrew Carmellini, Johnny Iuzzuni and Conor Hanlon were educated about the ancestral tradition of mezcal, made from the heart of the maguey plant which grows in the mountains of Oaxaca. In America, the artisanal spirit is a popular ingredient in craft and vintage-style cocktails. In addition to visiting the fields where the pants are grown and witnessing the roasting of them to distill the mezcal, the chefs dined at Casa Oaxaca, where celebrated Mexican Chef Alejandro Ruiz served his finest examples of regional Oaxacan cuisine; they toured the historic 17th century town and visited the oldest market, the Mercado de Abastos; and they attended the opening night of El Saber Del Sabor, a night that gathers together Mexico's top chefs to celebrate the gastronomy of Oaxaca.
